Cook for:

  • 8–10 whistles on medium heat
  • OR 35–40 minutes in an Instant Pot

The dal should mash easily.

Step 3 – Prepare Masala

Heat butter and oil.

Add cumin seeds.

Once they crackle, add onions and sauté until golden.

Add ginger-garlic paste and cook for one minute.

Now add tomato puree and cook until oil separates.

Step 4 – Add Spices

  • Turmeric
  • Red chilli powder

Step 6 – Slow Simmer

This is the secret to authentic Dal Makhani.

Simmer on low heat for 35–45 minutes.

Stir every 5 minutes.

Add warm water if the dal becomes too thick.

Step 7 – Finish

Add:

  • Butter
  • Fresh Cream
  • Crushed Kasuri Methi
  • Gudora Garam Masala

Cook for another 5 minutes.

Chef’s Tips

  • The longer you simmer, the creamier the dal.
  • Mash a small portion of the dal for a naturally thick texture.
  • Always add garam masala at the end for maximum aroma.
  • A small piece of charcoal with ghee (Dhungar method) gives a restaurant-style smoky flavor.

Serving Suggestions

Serve hot with:

  • Butter Naan
  • Garlic Naan
  • Tandoori Roti
  • Jeera Rice
  • Steamed Basmati Rice
